Plain Crispy Dosa

 Ingredients:

4 cups parboiled rice
2 cups black gram
salt to taste

Method:

  1.  Soak rice and gram separately for 4-5 hours.
  2. Grind rice and gram separately after the soaking is done.
  3. Ingredients should be grounded to a smooth batter.
  4. Add salt, mix the batter thoroughly in a large vessel and keep overnight in a warm place, for fermenting, approximately  up to 6-8 hours. 
  5. Heat the tawa on a slow steady flame.
  6. Spread very little oil on tawa, now pour a scoop full of batter and spread it evenly.
  7. When one side is done, remove carefully from the tawa, and turn on the other side.
  8. Now both sides will be crispy and golden brown. 
  9. Remove and serve these hot with spicy green coconut chutney.
