baked sabudana tikki

 Thanks to my mini baking donut pan, I was kinda successful in elevating, if I may say so, this delicious looking healthy sabudana tikki. Baked to perfection, crispy on the outside, slightly gooey on the inside- just how we like it. An ideal snack to go with your hot cuppa chai on a lazy rainy day. On a busy Tuesday, just pop it in the oven for a good 30 min at 275F. Broil for a few minutes, if you like it crispy. Fast track, no hassle sabudana tikki in the frames, just for you 👩‍🍳 

Ingredients:- 

2 Cups sabudana (tapioca pearls)
1/4 Cup peanuts (ground coarsely), 
2-3 boiled potatoes 
1/2 Tsp cumin seeds
7-8 Curry leaves
3-4 Chopped green chillies
1 Tbsp Ghee  (clarified butter) or Vegetable oil
1 tsp Sugar(optional)
1/2 Tsp lime juice(optional)
Salt to taste
For Garnishing :-2 Tsp finely chopped cilantro

Method:-

1. Wash sabudana in a colander or a strainer (get rid off the starch as much as possible) and soak for 45 minutes 1/4 cup of water.

** Sabudana should be soaked in 'just enough' water in which it is just submerged and no more.
** Let the sabudana soak the water for about 6-8 hours. It is best to leave it overnight and make the khichadi for breakfast.
** The sabudana will have soaked up all the water. If there is any liquid, drain it completely.
** Press a sabudana pearl in between your fingers and it should smash easily. 
** This show that sabudana is perfectly soaked.

Now Method To Make Baked Sabudana Tikki:-
1. Pre-heat oven to 275F.  
2. In a food processor coarsely grind peanuts (I have used Planters, salted peanuts)
3. Mix finely chopped green chilies, curry leaves, sugar, finely chopped cilantro,  boiled potatoes, ground peanuts, sugar and lime juice with sabudana.
4. Mix all the ingredients well. 
5. Spray donut pan with nonstick oil.
6. Make sabudana balls, and place it in the donut pan, making a hole, right in the center.
7. Spray some non-stick oil and keep it in the oven to bake at 275F for 30 minutes. 
8. Once done, you van broil these for another 5 minutes for a crispy texture.
9. Serve hot with fresh homemade yogurt!
