Anda Masala Cups ( Kerala Egg Cups)
1 Puff pastry sheet thawed
Method:-
1. Preheat oven to 400 degrees.
2 boiled eggs, scrambled
1 tsp ginger-garlic paste
1 green chilli, finely chopped
1/2 Tsp cumin powder

1/4 Tsp turmeric
1/4 Tsp chilli powder 1/2 tsp Of Garam masala
2 Tbsp oil

1/2 tbsp onion, finely chopped
1 tbsp cilantro, finely chopped, for garnishing

Method:-
1. Preheat oven to 400 degrees.
2. Boil, peel and scramble the eggs
3. Heat oil in a wide pan.
4. Add ginger-garlic paste, green chillies, chopped onions and sauté for a few minutes.

5. Add cumin-coriander powder, turmeric, chili powder and garam masala to the above mix, and sauté.
6. Sauté for a few minutes.

8. Add salt to the scrambled eggs and mix well. Keep it aside.
9. Roll out the puff pastry sheet with a rolling pin to remove all creases.
10. Cut the sheet into three strips of the same size.

12. Grease a muffin pan and place the puff pastry sheet on it. Add very little of the above masala to this cups.
13. Bake for about 20-25 minutes or until the puff pastry is golden brown.
14. Once the pastry cups are ready, fill them up with the masala scrambled boiled eggs.
15. Garnish this with finely chopped onions and cilantro.
16. Serve warm, either by itself or with mint chutney, along with a hot cuppa chai.
