Peshawari Namkeen Gosht (Royal Meat Curry)
This is a dish with a simple preparation. Super popular in Peshawar, a city in Pakistan. Made in clarified butter with adding very little spices. Imagine serving this elegant peshawari namkeen gosht with a side of garlic naan or tandoori roti!? A total winner 👑
Ingredients:
1 kg mutton- cut into medium sized pieces
3/4 cup ghee (clarified butter)
4 small onions finely chopped
3 tsp ginger-garlic-green chili paste
2 tomatoes finely chopped
1 cup plain yogurt - beat till smooth
2tbsp cream
salt to taste
Crushed and Pounded Masala:
2 tsp saboot dhania(coriander seeds)
3-4 whole red chillies
10-12 black peppercorns
1 tsp shah jeera (black cumin)
2 masala cardamom
Method:
1. Heat ghee in a cast iron pan.
2. Sauté onions, ginger garlic and green chillies until light golden brown.
3. Add finely chopped tomatoes and bhuno some more
4. Now add the meat and sauté well for approximately 5 minutes
5. Add the pounded masala and sauté on low to medium flame for 10 minutes
6. Sprinkle some water, if the gravy is very dry
7. Now add the yoghurt, stir for a minute and shut the lid
8. Let the meat cook for 20-25 minutes on low to medium flame
9. Once the meat is cooked, add cream
10. Garnish with finely chopped cilantro and serve hot with rice or tandoori roti/naan
