Railway Mutton Curry

How about some Railway Mutton Curry for  Sunday dinner? This makes for a very happy Sunday indeed! 

Marinate the mutton with lemon juice and some salt. Refrigerate this for 30 minutes. 


Wet masala - Grind together 1 cup fresh grated coconut, 4-5 garlic cloves, 4-5 dry red chilies, roasted coriander and cumin seeds- 1 1/2 tsp each, and 2 tsp of black peppercorns. 


Method:

  1. In an earthenware pot, pour some oil. 
  2. Add curry leaves, finely chopped onions and sauté, until light golden brown.
  3. Add 1 tsp of ginger-garlic paste, sauté well.
  4. Add the marinate mutton, and sauté for another 5 minutes.
  5. Now add the wet masala, and sauté for another 5-10 minutes on low to medium flame.
  6. Add some potato chunks (optional) and sauté for another minute.
  7. Add some hot water to this, stir, close, and let the railway mutton curry cook slowly on the low to medium flame for a good 30 minutes or until done. 
  8. Garnish the railway mutton curry with ginger juliennes. 
  9. Serve with hot white rice or roti/naan.
