Uttappam Waffles (Savory Pancakes)

Presenting Uttappam waffles - Here's a special dish from my kitchen πŸ‘©‍🍳🏑 When the humble uttapam batter meets the oh so fancy waffle maker, expect nothing but magic πŸ”₯To one batter, many dishes πŸ˜‹ 

Ingredients:-
3  Cups of boiled rice
1-1/2 Cup of black gram
1 tbsp Fenugreek seeds
3-4  Medium sized red onions finely chopped
4-5 Hot green chillies finely chopped
a few curry leaves (optional)
salt to taste

Method:-
1. Soak rice with fenugreek seeds and gram separately in two vessels for about 4-5 hours.
2. Grind rice and gram separately to a smooth paste.
3. Add salt, mix both the pastes thoroughly in a large vessel and keep overnight (7-8 hours) for the batter to ferment.
4. When fermented-add onions, green chillies and curry leaves. (The batter should be thick and not very thick-moderate thick will do, add water if the batter is too thick)
5. Mix well.
6. Now, heat up the waffle maker. Spray some non-stick oil for cooking on the heated plates.
7. Go on and pour a scoop full of the Uttappam batter. Make sure to spread it evenly on the heated plates, with moderate layer of the batter.
8. Close the lid of the waffle maker, and wait till the light goes off. 
9. Do not rush to open the lid. Give it a few minutes, and then open the lid. 
10. The hot and crispy uttappam waffles will simply slide off the plates.
11. Now, both sides are crisp and golden brown.
12. Serve these with nice spicy cilantro chutney and a cuppa chai.
