Papadums Pop In for Cinco de Mayo


"Thaar ke Papad-  Papadums that go beyond taste and texture!"

Ingredients:-
16 Papads
Oil for deep frying

***For The Vegetarian Stuffing
(You can also use Minced Meat as a stuffing)
150 gms potatoes boiled and diced
100 gms green peas, gently mashed
30 gms brown onions, crushed
1/2 tsp Garam masala powder
1/2 tsp Mango powder
40 gm Capsicums, chopped
1 tsp green chilies, chopped
1 tsp ginger, chopped
3-4 tbsp Cilantro, finely chopped
Approx 1-2 Tsp chaat masala (optional)
Salt to taste

*** For The Sauce
2 tbsp Butter
1 Onion, pureed in the food processor
2-3 Garlic cloves, minced
2 tbsp Flour
1 tsp Sugar
1/4 tsp Each basil, rosemary, thyme and oregano
1 tsp Red Chilli flakes
1 tsp tabasco sauce
1 cup tomatoes, finely chopped
3-4 tbsp Parmesan cheese
Salt & pepper, to taste
Method:-
*** For The Papad Spring Rolls
1. Carve along the edges in an interesting design.
2. To prepare the stuffing, mix potato dices with remaining ingredients and keep aside.
3. Dip Papads one by one in water, pull them out immediately and stuff them with potato filling mixture and roll like a spring rolls.
4. Deep-fry over medium heat till golden brown. 
5. Garnish with chopped cilantro
6. Sprinkle chaat masala and serve with the sauce.


*** For The Sauce
1. Heat 2 tbsp butter in a large enough saucepan. Add the minced garlic and cook till translucnet
2. Add in the pureed onion. Cook till translucent.
3. Mix flour, sugar, salt, basil, oregano, rosemary, thyme, piri-piri. Blend it into the onion mixture.
4. Add the tabasco and pepper.
5. Add the chopped omatoes, and cook till smooth. 
6. Add in the parmesan cheese and cook for few more seconds.
7. Serve the Papad Rolls with the sauce.
