Chicken in Hot Garlic Sauce


Chicken in Hot Garlic Sauce- is an adaptation from Nita Mehta's Cookbook,"Learn To Cook 
Chicken"

"WoW!! Memory is so oddly selective :-) 
I don't exactly remember the name of the place where I first had 'Chicken in Hot Garlic Sauce', but what I remember is- it sure was great place to hang out at night for us friends who were always on a budget! 

Do you remember such perfect place you've been to, to chill out with your friends while on a budget? Share 1 such endless night of chattering-will you :D? While you embrace your memories with arms wide open, lemme share the ingredients n' method for the same  above Beauty I mean:D

Note To My Dear ReadersYou can skip the whole chicken marination step:-) HOW?
 ANSWER- Just Get A Packet Of 'Popcorn Chicken' (Bake it at 400 deg F for 15 minutes)And Tadaa- Mix them with the Hot Garlic Sauce ;-) Your Chicken in Hot Garlic Sauce Is Ready!!!

Ingredients:-
1 lb/ 2oo gms boneless chicken, cut into 1" pieces
1 Tbsp finely chopped garlic
2 Tbsp red chilli paste
3 Tbsp tomato ketchup
1/2 Tsp sugar (optional)
1/4 Tsp ajinomoto (optional)
2 Cups water mixed with 2 tbsp of cornflour and white pepper
1 Tbsp vinegar
2 Tbsp soya sauce
1 Tbsp red chilli sauce
For Garnishing-1 Spring onion finely chopped


Marinade:-
1 Egg, 3/4 tsp salt, 1/2 tsp ajinomoto and 1 tsp white pepper powder
1 Tbsp cornflour and 1 tbsp oil


Method:-
1. Cut chicken into 1" pieces.
2. Marinate the chicken ina ll the ingredients of the marinade. Cover and keep in the refrigerator for atleast 2-3 hours.
3. Heat oil in a wok and eep fry the chicken pieces until golden brown and crsip. Remove on a paper towel and keep aside.
*** You can skip the marination and step1-3, if you have a packet of Popcorn Chicken In Your Refrigerator!
4. Heat 3-4 tbsp of oil in another wok, add white of spring onions, cook till soft.
5. Reduce heat. Add garlic and chilli paste. When garlic changes color, add tomato ketchup, vinegar, soya sauce and red chilli sauce.
6. Add chicken pieces and cook for another minute on low heat/flame Stir-fry and add ajinommoto and sugar.
7. Dissolve cornflour in 2 Cups of water and add it slowly to the chicken, stirring continuously till it just starts to thicken. Throw away the extra cornflour mix.
8. Add greens of spring onions. Remove from fire.
9. Serve hot along with boiled rice or noodles.

mmmmm hot good old days....the food joint behind our building no more exist but had it with a couplr of college buddies. The combination of vegetable schezwan rice and chicken in hot garlic sauce was awesome!
