Project 365 Days Of Food- Day 2, Relaxing Mumbai Masala Diamonds!


Before My Veggie Friends Choke me To Death :( Here is a lil' something for you!! 
" Relaxing Mumbai Masala Diamonds"

Ingredients:-
4 Toasted slices of Bread (I have used Ciabatta Rolls here)
1 Finely chopped medium onion 
1/2 Finely chopped roma tomato 
1 Finely chopped green bell pepper 
2-3 Tsp finely chopped of Ginger-Garlic 
2 tbsp Tomato Ketchup
1/2 - 1 Tbsp Pao Bhaji Masala
1/2 Stick of salted butter
1/2 Finely chopped cilantro
For Garnishing - Grated Cheese or Grated Paneer 



Method:-
1. Melt 1/2 stick of butter in  a pan.
2. Add finely chopped ginger-garlic and saute.
3. Add chopped onion and cook till light brown.
4. Add chopped green bell pepper and saute for 2 mins on low flame.
5. Now add the remaining ingredients, chopped tomato, tomato ketchup and garam masala.
6. Cook the above masala till it thickens.
7. Now, spread 1 tbsp of the above masala mix on the toasted slice of bread.
8. Garnish this toast with grated Cheese/Paneer and Finely Chopped Cilantro.
9. Grill or bake in an hot oven for 5-7 minutes.
10. Serve these Relaxing Mumbai Masala Diamonds With Chai/Coffee.

I bow before thee, oh great one! I made this today and it was PERFECT :) Now my husband thinks I've morphed into a domestic goddess, what with the mumbai masala pav, lol!

Lol @ Vaani and Thank You Ladies- There are dozens of delicious loaves out there at the Bakery, i keep trying the unusual varieties every now and then- Parth n' I simply mop up every last drop of stews n gravies with these delicious breads! Now you know, why they don't make it to my blog :( *sigh*
