Methi Aloo !! (Tasty Fenugreek leaves with deep fried potato)

It is easy to get confused when you are super excited and trying to do something new. Very often when I am experimenting on these recipes, I have to admit that I do get hyper. That reminds me, as a child practicing all sorts of tricks to get that kick once in a while..did ample of screaming with some heavy spinning around. Later, when I grew up a few chocolates and caffeine did that for me. Not that I am addicted to all of this, you all know me very well - "I am a very simple person ;)" but I guess back then to kill boredom these were a couple of things I remember executing with friends. That's about it ..nothing more ! Seriously .

So, coming back to where I started from. Actually, before I start I would like you all to know that just recently Cincinnati has been facing fierce sunny spells. Yes, summer is expected to be even hotter this year, i.e 2010. Okay, so until now the A/C which is installed in our apartment has been working absolutely fine, but I wanted to try out something new to beat the heat this year, hence I got these dark window screens/films which would help in blocking the scorching heat that comes directly through the glass windows to our apartment. I opened this roll of the film, it had a few instructions which are supposed to be 'READ' but who cares ? "I know it all"...I grab the roll and start to separate the liner from the main screen. Now, when the instructions clearly said "use the darker screen and get rid of the clear liner" I absolutely had to use my brains and do it the other way. Not just that, I separated the liner and started to cover the window pane with it. What next, and hour and a half spent and wasted in trying all the wrong methods. Some miracle I must say happened and I went back to the cover of the roll which had the RIGHT instructions, got hold of it, READ IT and most importantly UNDERSTOOD IT! Took a deep breath and started all over again!

While, I was at it the second time I thought of watching something on TV. I was surfing through the TV guide and came across this movie titled "Goans Hamare, Sehar Tumhare"  Eh ? EXACTLY  YOU ARE SO RIGHT - it actually said "GAON Hamare Sehar Tumhare".

With some Kadva Truth, here I am posting a not so Kadvi 'Methi Aloo' Recipe :)

1 1/2 cup fresh methi (fenugreek) leaves - Washed and finely chopped)
(I have used a frozen packet of methi for this one, but I would always prefer a fresh bunch of methi over the frozen one)
1 medium sized potato peeled and cut into small cubes
deep fry these cubes and keep them aside (we will use them later)
1 medium sized chopped tomato
1/3 medium sized chopped onion
1-2 flakes of crushed garlic
Salt To Taste
1/4th tsp turmeric powder
1/2 tsp cumin seeds (jeera)
2-3 tbsp vegetable oil  

Method :- 
1. Heat the vegetable oil in a pan and add crushed garlic, fry till light brown.
2. Add cumin seeds and let them crackle.
3. Add chopped onion and saute till they turn translucent.
4. Add chopped tomato and saute again, then add salt, turmeric, cumin and coriander pwd and saute for less than a minute.
5. Add methi (fenugreek leaves)and cook on a medium flame. Saute for another 4-5 minutes.
6. Now add the deep fried potatoes and mix well.
7. Add very little water, about 1-2 tbsp and cook the methi aloo till the water is fully absorbed.
8  Serve hot with puri/roti/chapati.
